I created today’s recipe for Pesto Green Beans as a kid friendly side dish for chicken. But you don’t have to wait for your best chicken recipe to serve it.
Eric’s Pesto Green Beans
2 Tbsp. pesto
¼ cup red wine vinegar
¾ cup extra virgin olive oil
1 lb. French green beans
1 pinch salt & pepper, to taste
- Fill the Copper Chef half way with water. Add 1 tbsp. sea salt. Bring to a boil and add green beans. Cook until tender.
- In a separate bowl, combine pesto, red wine vinegar, olive oil, salt, and pepper.
- Toss green beans with pesto mixture before serving.
